Recipes

Some of you have asked me to pass along recipes that "work" for Ben. Here ya go.
Baking without wheat or eggs is challenging, but I found a banana bread recipe that worked! (Never undersestimate the power of xanthan gum).

1 1/2 cups flour (I use Bob's Red Mill)
1 1/2 tsp xanthan gum
3/4 cup white sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 egg whites (I used egg replacer)
1 cup banana, mashed (almost always exactly 3 medium sized bananas from the freezer)
1/4 cup applesauce

Preheat oven to 350. Lightly grease 8x4" pan. Mix dry ingredients. Add wet just until combined. Bake 50 minutes. Cool on wire rack.

3 notes about this recipe:
--I love it with gluten and eggs. Just omit the xanthan gum if you use all purpose flour.
--Ben does not love it. Bummer. But it looks, tastes, and feels like bread. Success!
--There's no such thing as too much cinnamon.

We went to dinner at someone's house and she was thoughtful enough to make Chicken "nuggets" for Ben. He. Loved. Them.
We proved tonight it wasn't a fluke - he likes 'em when I make them, too! Even Keith thinks they're tasty. I LOVE how easy they are (and much, MUCH cheaper than GF nuggets)
Cut chicken breasts or tenders into 1" pieces (you can do it w/the chicken still kinda frozen - it's easier to cut that way).
Put the chicken pieces in a large bowl. Add enough olive oil to coat the pieces.
Add Parmesan cheese to coat the pieces.
Bake in a single layer at 350 for 15 minutes.
Wallah! Chicken a la Ben :)
